This 5-Minute Mediterranean Feta Omelette provides the perfect sunshine-filled start to a busy workday or a slow, relaxing weekend morning with vibrant, salty, and fresh flavors.
Ingredients

2 or 3 large Eggs
2 tbsp Feta Cheese (crumbled)
Small handful Baby Spinach
4–5 Cherry Tomatoes (halved)
1/4 tsp Dried Oregano
1 tbsp Butter or Olive Oil
Salt and Pepper to taste
Instructions
- Step 1: Crack your eggs into a small bowl. Add a pinch of salt, a dash of pepper, and the dried oregano. Whisk them vigorously until combined
- Step 2: Heat a small non-stick skillet over medium-low heat and add butter or olive oil. Wait for it to melt and start bubbling
- Step 3: Add cherry tomatoes and spinach to the pan, sauté for 30-60 seconds until spinach wilts
- Step 4: Pour the whisked egg mixture over the vegetables. Let sit for about 20 seconds and gently push cooked edges toward the center to allow raw egg to flow i
- Step 5: Once mostly set, sprinkle crumbled feta over one half, fold the other half over it, and let it sit for another 30 seconds. Serve immediately
Notes
Use a non-stick pan to prevent sticking.
Do not overcook the eggs; they continue to cook after being removed from heat.
