Description

This Asparagus and Feta Frittata is a quick, healthy meal packed with protein and vibrant flavors, perfect for busy evenings.


Ingredients

8 Large Eggs
1 bunch (about 1 lb) Fresh Asparagus
4 oz Feta Cheese
1 tbsp Olive Oil
1/4 cup Red Onio
2 cloves Garlic
2 tbsp Milk or Cream
1/2 tsp Salt
1/4 tsp Black Pepper
1 tbsp Fresh Dill (optional)


Instructions

  1. Preheat your oven to 375°F (190°C). Whisk the eggs with milk, salt, and pepper until light and frothy. Set aside
  2. Heat olive oil in a 10-inch oven-safe skillet. Sauté the red onion for 2-3 minutes, then add garlic and asparagus, cooking until tender-crisp
  3. Spread the vegetables in the skillet, sprinkle half of the feta on top, then pour the egg mixture over
  4. Cook on stovetop for 3-5 minutes until edges set. Then sprinkle remaining feta and transfer to the oven. Bake for 10-15 minutes until puffed and set
  5. Let the frittata rest for 5 minutes before slicing and serving

Store leftovers in an airtight container for up to 3-4 days in the refrigerator.
