Ingredients
2 lbs Fresh Asparagus
2 tbsp Olive Oil
1 medium Yellow Onio
3 cloves Garlic
1/4 cup All-Purpose Flour
2 cups Vegetable Broth
1 cup Milk
2 tbsp Nutritional Yeast
1 tsp Dijon Mustard
1.5 cups Shredded Cheddar Cheese
0.5 cup Shredded Gruyère Cheese
1/2 cup Panko Breadcrumbs
2 tbsp Fresh Parsley
Salt to taste
Black Pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and prepare a baking dish
- Trim and cut the asparagus into 1-inch pieces and blanch briefly, then cool in an ice bath
- Sauté onion in olive oil, add garlic, then sprinkle flour and create a roux
- Gradually whisk in broth and milk, bring to a simmer and thicken, then add cheeses and seaso
- Fold in asparagus, pour into a baking dish, and top with breadcrumbs and cheese
- Bake for 20-25 minutes until bubbly and golden brow
- Let rest before serving, garnish with parsley
