This Beef noodle soup with garlic chili oil and bok choy delivers warmth and flavor, perfect for cozy evenings or special gatherings. It features tender beef, springy noodles, vibrant bok choy, and a homemade garlic chili oil that enhances the deep, soul-satisfying broth.
Ingredients
2–2.5 lbs Beef chuck roast or boneless short ribs
2 tbsp Neutral oil
1 large Yellow onion, roughly chopped
6–8 Garlic cloves, smashed
3–4 inch piece Fresh ginger, sliced
3–4 pods Star anise
1 Cinnamon stick, about 3-inch
2 Bay leaves
8 cups Beef broth, low sodium
1/4 cup Soy sauce, low sodium
2 tbsp Rice wine vinegar
1 tbsp Brown sugar, packed
4–6 cups Water, as needed
1 cup Neutral oil (for garlic chili oil)
1/2 cup Garlic, minced
1/4 cup Chili flakes (e.g., Gochugaru, Aleppo)
1 tsp Sichuan peppercorns (optional)
1/2 tsp Salt
1 lb Fresh or dried egg noodles (or ramen)
2–3 heads Bok choy, trimmed and halved or quartered
1/4 cup Green onions, chopped (for garnish)
1/4 cup Fresh cilantro, chopped (for garnish)
Instructions
- Prepare the Beef: Pat the beef chuck roast dry and cut into 1.5-2 inch chunks. Season generously with salt and pepper
- Sear the Beef: Heat neutral oil in a large pot over medium-high heat. Sear beef in batches until browned, about 3-4 minutes per batch. Set aside
- Build the Broth Base: Reduce heat to medium, add onion, garlic, and ginger. Sauté for 5-7 minutes until softened
- Add Aromatics & Liquids: Stir in star anise, cinnamon, and bay leaves. Add broth, soy sauce, vinegar, and sugar. Return beef and add enough water to cover
- Simmer the Beef: Bring to a boil, then reduce heat and simmer for 2-3 hours until beef is tender. Add water if needed
- Make the Garlic Chili Oil: Combine oil, minced garlic, chili flakes, peppercorns, and salt in a small saucepan. Heat over low for 10-15 minutes until garlic is golde
- Strain the Broth: Remove beef, strain broth and return beef to pot
- Cook the Noodles & Bok Choy: Boil salted water, cook noodles until al dente, add bok choy in the last minute. Drai
- Assemble and Serve: Divide noodles in bowls, ladle broth and beef, arrange bok choy, drizzle with garlic chili oil, and garnish
