Description
A delicious Beef taco salad topped with chipotle ranch and fresh pico de gallo, packed with flavors and textures. This meal is easy to prepare and highly customizable, making it perfect for weeknight dinners or gatherings.
Ingredients
1 pound Ground Beef (80/20 or 90/10 lean)
1 tablespoon Olive Oil
1 packet (1 oz) Taco Seasoning OR 2 tablespoons Homemade Taco Seasoning
1/4 cup Water
1/4 cup Mayonnaise
1/2 cup Buttermilk
1 tablespoon Lime Juice
1/2 teaspoon Garlic Powder
1/4 teaspoon Dried Dill
1/2 teaspoon Onion Powder
2 ripe Roma Tomatoes, diced
1/4 cup finely diced Red Onio
1/4 cup chopped Fresh Cilantro
1–2 tablespoons Canned Chipotle Peppers in Adobo, minced
1 small Jalapeño, seeded and minced (optional)
1 cup Cooked Black Beans, rinsed and drained
1 cup Cooked Corn (fresh, frozen, or canned)
6 cups Chopped Romaine Lettuce
1/2 cup Shredded Cheddar Cheese (or Monterey Jack)
1/4 cup Sliced Black Olives (optional)
1 Avocado, diced
Crushed Tortilla Chips or Strips, for garnish
Salt to taste
Black Pepper to taste
Instructions
- In a medium bowl, combine the mayonnaise, buttermilk, minced chipotle peppers in adobo, lime juice, garlic powder, onion powder, and dried dill. Whisk until smooth and creamy
- In another bowl, combine diced Roma tomatoes, finely diced red onion, chopped cilantro, and minced jalapeño. Squeeze in lime juice and season with salt, mixing gently
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and brown thoroughly, breaking it up with a spoon for 6-8 minutes
- Drain excess fat from the skillet, then sprinkle taco seasoning over the beef and add water. Stir and simmer for 2-3 minutes until thickened
- In large bowls, layer the chopped romaine lettuce first
- Top with the seasoned beef, rinsed black beans, corn, shredded cheese, and sliced olives
- Dollop pico de gallo on top and add diced avocado
- Drizzle chipotle ranch dressing over the salad and garnish with crushed tortilla chips before serving
Notes
Make sure to wash and dry the lettuce to prevent sogginess.
Store leftover components separately to maintain freshness.
