Description
Birria tacos are crispy, cheesy tacos filled with slow-braised meat soaked in a rich, spicy broth called consomé, native to Jalisco, Mexico.
Ingredients
lbs beef chuck roast (or preferred meat)
dried guajillo chilies
dried ancho chilies
dried pasilla chilies
cloves garlic
tsp cumi
tsp oregano
stick of cinnamo
whole cloves
/4 cup apple cider vinegar
cups beef broth
Corn tortillas
Oaxaca cheese (or mozzarella)
Instructions
- Prepare birria marinade by toasting, soaking, and blending chilies with spices and vinegar
- Marinate meat with the sauce for at least 4 hours, preferably overnight
- Cook meat using stovetop, slow cooker, or Instant Pot until tender
- Make consomé by straining cooking liquid, skimming fat, and adjusting seasoning
- Assemble tacos with meat and cheese, fry until crispy, serve hot with consomé
Notes
Adjust spice levels according to preference.
Fresh lime, onions, and cilantro can enhance the consomé.
