1/4 cup Apple Cider Vinegar (with the ‘Mother’)

Instructions

  1. Prepare the meat or plant-based protein, removing the silver skin from the back of pork ribs. Apply the dry rub of smoked paprika, salt, and pepper and let it sit for at least 30 minutes
  2. Preheat your oven to 300°F (150°C). Wrap the ribs tightly in foil and place them on a baking sheet. Slow-roast for about 2.5 to 3 hours
  3. While the ribs bake, prepare the glaze by combining bourbon, brown sugar, apple cider vinegar, garlic, mustard, and tomato paste in a saucepan. Whisk until sugar dissolves and simmer for about 15 minutes until it thickens
  4. Remove the ribs from the oven when tender. Increase the oven temperature to 400°F (200°C) or turn on the broiler. Brush the glaze generously over the ribs and return them to the oven uncovered for 10-15 minutes until the sugars caramelize
  5. Let the ribs rest for 10 minutes before slicing to allow juices to redistribute
