2 medium Carrots
3–4 Garlic Cloves
4 cups Vegetable Broth
1.5 cups Real Heavy Cream
2 cups Sharp Cheddar Cheese
2 tablespoons Unsalted Butter or Olive Oil
1/4 cup All-Purpose Flour or GF Flour Blend
1 teaspoon Dijon Mustard
2 tablespoons Nutritional Yeast
Salt to taste
Black Pepper to taste
Pinch of Nutmeg (optional)


Instructions

  1. Prepare your veggies: finely dice the onion and carrots, mince garlic, chop broccoli, and grate cheddar cheese
  2. Sauté aromatics: melt butter or heat olive oil, add onion and carrots, sauté for 8-10 minutes until soft
  3. Add garlic and flour: stir in garlic, then flour, cooking for 1-2 minutes to create a roux
  4. Whisk in broth: gradually add vegetable broth, bring to simmer, cook for about 5 minutes until thickened
  5. Cook the broccoli: add broccoli, cover and simmer for 10-15 minutes until tender
  6. Blend (optional): use an immersion blender to achieve desired consistency
  7. Introduce cream and cheese: reduce heat, stir in cream and mustard, gradually add cheese until melted
  8. Season and serve: taste and adjust seasonings, serve immediately
