A crisp spice cookie without a mold

Thin brown-sugar cookies with cinnamon, a little cardamom and a clean snap belong in a mixed December tin. The rectangular cut makes this working speculoos interpretation possible without a specialty wooden mold.

Chefly has a Biscoff cookie-butter cake, which is a different dessert. The cookie should also remain distinct from the softer honey-and-almond Lebkuchen drafted the day before.

Brown sugar and the spice balance

Dark brown sugar contributes a deeper caramel note than granulated sugar. Cinnamon leads, with smaller amounts of ginger, cardamom and cloves. The dough contains one egg yolk and one measured tablespoon milk, so it is not a dairy-free or egg-free cookie.

Good Food offers a speculoos cookie reference with a different formula. This version's dough thickness and baked snap are design targets, not observed test results.

Ingredients for 30 cookies

Working measured recipe
IngredientAmountUse
Unsalted butter, softened1/2 cupCream with brown sugar.
Packed dark brown sugar3/4 cupFor deep sugar flavor.
Large egg yolk1 yolkRichness and binding.
All-purpose flour1.75 cupsSpoon and level.
Ground cinnamon2 teaspoonsMain spice.
Ground ginger1/2 teaspoonSupporting spice.
Ground cardamom1/4 teaspoonSupporting spice.
Ground cloves1/8 teaspoonUse sparingly.
Baking soda1/4 teaspoonSmall leavening amount.
Fine salt1/2 teaspoonBalance sweetness.
Milk1 tablespoonOnly the measured amount to bind.

Step-by-step method

  1. Beat 1/2 cup softened butter with 3/4 cup packed dark brown sugar until combined and slightly fluffy. Beat in one egg yolk. Whisk 1 3/4 cups flour, 2 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp cardamom, 1/8 tsp cloves, 1/4 tsp baking soda and 1/2 tsp salt separately.
  2. Mix the dry ingredients into the butter mixture with 1 tbsp milk until a cohesive dough forms. Divide in two, flatten into disks, cover and chill 60 minutes.
  3. Heat oven to 350°F. Roll one chilled disk at a time between parchment to approximately 1/8 inch thick. Cut roughly thirty 2-by-3-inch rectangles in total, rerolling scraps once. Transfer to parchment-lined sheets, leaving space between them.
  4. Bake one sheet at a time approximately 10–12 minutes until edges are deep brown and centers set. Cool on the sheets for five minutes, then transfer to a rack to cool fully, about 30 minutes in total. Evaluate whether the cooled cookies snap crisply before finalizing thickness, bake time and yield.

Roll after the chill

Chill the two flattened disks for a full hour; warm butter dough tends to smear under a rolling pin. Roll between parchment to about one-eighth inch. Uneven thickness can turn one edge dark while a thick center remains bendy.

Cut similarly sized rectangles so each tray finishes together. Reroll the scraps once rather than repeatedly adding flour and toughening the last pieces.

Read the edges before removing

Bake one tray at a time for an estimated ten to twelve minutes. The cookies should be set and darker at the edges, then firm further on the rack. Hot cookies can feel flexible even when they later snap.

If they stay soft after complete cooling, record actual thickness and oven temperature before changing ingredients. If they are bitter and almost black, shorten the next bake rather than calling that extra crispness.

Serving and holding

These are plain spice cookies, without frosting or a spread layer. Arrange them beside other flavors but check wheat, milk and egg labels for anyone receiving an assortment.

A precise storage or shipping-life claim has not been tested. Evaluate crispness after a day in a tin and whether other moist cookies soften them before writing a gifting claim.

Speculoos questions

Do I need a windmill mold?

No. The proposed version uses simple rectangles rolled to a consistent thickness.

Are these the same as Lebkuchen?

No. This version aims for a thin snap; the Lebkuchen draft has honey, almonds and a soft crumb.

Can I skip the chill?

The one-hour chill is part of the working method to make thin rolling manageable.
