Ingredients
1.5 lbs Ground Chicke
1 medium Yellow Onio
4 cloves Garlic
3 stalks Celery
2 cans (15 oz) White Cannellini Beans
3 cups Chicken Broth
1/2 cup to 3/4 cup Buffalo Hot Sauce
8 oz Tomato Sauce
1 packet Ranch Seasoning Mix
1/2 cup Blue Cheese Crumbles
3 stalks Green Onions
Instructions
- Sauté the Aromatics: Heat a large pot or Dutch oven over medium-high heat. Add a splash of olive oil. Toss in the diced onion and celery. Sauté these for about 5 minutes until they soften. Add the minced garlic and cook for another 60 seconds
- Brown the Chicken: Push the veggies to the side. Add the ground chicken to the center of the pot. Break it up with a wooden spoon. Cook until the chicken is no longer pink
- Season the Base: Sprinkle the ranch seasoning packet over the meat and veggies. Stir well to coat everything
- Add the Liquids: Pour in the buffalo hot sauce, tomato sauce, and chicken broth. Scrape the bottom of the pot to release any flavorful browned bits
- Simmer with Beans: Stir in the drained white beans. Bring the mixture to a boil, then reduce the heat to low. Let it simmer for at least 15 minutes
- The Finishing Touch: Taste the chili and adjust seasoning or thickness if necessary
- Garnish and Serve: Ladle the chili into deep bowls. Top each serving with blue cheese crumbles and sliced green onions
Notes
For a vegetarian version, replace the chicken with extra cans of chickpeas or a meat substitute.
If you don't like blue cheese, substitute with sharp white cheddar or a dollop of Greek yogurt.
