1/2 cup Cherry Tomatoes, halved
4–5 Fresh Basil Leaves, chiffonaded
1–2 tablespoons Balsamic Glaze
1 tablespoon Unsalted Butter
Salt and Pepper, to taste


Instructions

  1. Step 1: Crack the eggs into a bowl and whisk them with salt and pepper. Prepare the tomatoes, mozzarella, and basil
  2. Step 2: Heat a non-stick skillet with butter on medium-low until melted. Pour in eggs and let sit
  3. Step 3: Gently push the cooked edges towards the center. Once set, add cheese and tomatoes to one half
  4. Step 4: Fold the omelette and press down lightly for cheese to melt. Cook for another 30-60 seconds
  5. Step 5: Slide onto a plate, drizzle with balsamic glaze, and garnish with basil
