Description

This Cheddar Bay Biscuit Seafood Pot Pie combines the comfort of a warm seafood filling with the delightful taste of cheesy biscuits, making for an easy and delicious meal.


Ingredients

1 box (11.36 oz) Red Lobster Cheddar Bay Biscuit Mix
1 lb Shrimp (peeled and deveined)
1/2 lb Lump Crab Meat or Scallops
2 cups Frozen Mixed Vegetables
1 cup Heavy Cream
1.5 cups Seafood or Chicken Broth
4 tbsp Butter (unsalted)
1/4 cup All-Purpose Flour
1/2 cup Shredded Sharp Cheddar
1 tsp Garlic Powder
1 tsp Old Bay


Instructions

  1. Preheat your oven to 400°F (200°C). Dry your shrimp and scallops with paper towels
  2. Melt 2 tablespoons of butter in a large oven-safe skillet over medium-high heat. Add shrimp and scallops and cook for 2 minutes per side, then remove and set aside
  3. In the same skillet, melt the remaining butter. Whisk in the flour and cook for 60 seconds. Gradually add broth and heavy cream while whisking constantly until smooth
  4. Stir in frozen vegetables, garlic powder, and Old Bay seasoning. Simmer for 5 minutes, then fold in the partially cooked seafood
  5. Prepare the biscuit topping by mixing the Cheddar Bay Biscuit mix according to the box instructions. Add cold water, shredded cheese, and herb packet without overmixing
  6. Drop dollops of biscuit dough onto the bubbly seafood mixture, leave space between them, and bake in the oven for 15-18 minutes until golden brow
  7. Brush melted butter over the hot biscuits after baking

Notes

For a dairy-free version, you can substitute heavy cream with coconut milk.

If using frozen shrimp, ensure they are thawed and dried before cooking.
