Description

Cheesesteak Tortellini in Provolone Sauce is a creamy yet light dish that combines the nostalgic flavors of a classic Philly cheesesteak with wholesome ingredients, making it a comforting yet nutritious meal.


Ingredients

16 oz Cheese Tortellini
1 lb Thinly Sliced Sirloin or Ribeye
1.5 cups Provolone Cheese (shredded)
2 large Green and Red Bell Peppers
1 medium Yellow Onio
3 cloves Garlic
1 cup Low-Sodium Beef Broth
1/2 cup Greek Yogurt (plain)
2 tbsp Olive Oil


Instructions

  1. First, bring a large pot of salted water to a boil. Cook your tortellini according to the package instructions. Aim for 'al dente' to maintain a good bite. Drain the pasta but reserve about half a cup of the starchy cooking water
  2. While the pasta cooks, heat one tablespoon of olive oil in a large skillet over medium-high heat. Add your thinly sliced beef and sear the meat quickly until it browns beautifully. Remove the beef from the pan and set it aside
  3. In the same skillet, add the remaining tablespoon of oil, then toss in your sliced onions and bell peppers. Sauté until they soften and develop slightly charred edges
  4. Next, add the minced garlic and cook for just sixty seconds until fragrant. Pour in the beef broth to deglaze the pan, scraping up all the flavorful brown bits from the bottom
  5. Reduce the heat to low and stir in the Greek yogurt and shredded Provolone cheese, stirring continually until the cheese melts into a smooth, velvety sauce. If the sauce looks too thick, add a splash of the reserved pasta water
  6. Finally, fold the cooked tortellini and seared beef back into the skillet. Toss everything gently until the Cheesesteak Tortellini in Provolone Sauce is perfectly coated. Serve immediately

Notes

You can add fresh spinach at the end to increase fiber and iron content.

For a vegan version, swap steak for portobello mushrooms and use vegan cheese.
