Description

Chicken Caesar Flatbread with Crispy Chickpeas is the perfect marriage of savory pizza and classic Caesar salad, featuring crunchy roasted chickpeas, creamy dressing, and protein-rich chicken on a warm flatbread base.


Ingredients

2 large pieces Pre-made Flatbread or Naa
2 cups Cooked Chicken Breast (sliced)
1 can (15 oz) Canned Chickpeas (rinsed and dried)
3 cups Romaine Lettuce (chopped)
1/2 cup Shaved Parmesan Cheese
1/2 cup Caesar Dressing
To taste Olive Oil
To taste Garlic Powder
To taste Salt
To taste Pepper


Instructions

  1. Preheat your oven to 400°F (200°C). Dry your rinsed chickpeas thoroughly with a paper towel
  2. Toss the chickpeas with olive oil, salt, and garlic powder. Spread them on a baking sheet and roast for 20-25 minutes until golden brow
  3. During the last 5 minutes of roasting, place the flatbreads directly on the oven rack to toast them until warm and slightly crisp
  4. In a large bowl, toss the chopped romaine lettuce with half of the Caesar dressing
  5. Spread a thin layer of dressing onto the toasted flatbread. Layer the dressed romaine, sliced chicken, and roasted chickpeas on top
  6. Finish with a sprinkle of shaved parmesan and a crack of fresh black pepper

Notes

For a crispier chickpeas, ensure they are completely dried before roasting.

Store components separately for best results; assemble fresh before serving.
