Ingredients
1 lb Chicken Breast or Thighs
8 oz Udon, Lo Mein, or Spaghetti
2 cups Broccoli, Carrots, Snap Peas (mixed)
2 cloves Garlic
1 tsp Fresh Ginger
1/2 cup Soy Sauce (Low Sodium)
1/4 cup Honey or Brown Sugar
1 tbsp Sesame Oil
1 tbsp Cornstarch
1 tbsp Water
Instructions
- Prepare the noodles according to the package instructions. Drain and set aside
- In a small bowl, whisk together soy sauce, honey, sesame oil, ginger, and garlic
- In a separate tiny cup, mix cornstarch and water until smooth
- Heat a large skillet over medium-high heat with a splash of vegetable oil
- Add diced chicken and cook for 5 to 7 minutes until no longer pink. Remove from pa
- Add mixed vegetables to the same pan and stir for 3 to 4 minutes until fork-tender
- Pour prepared sauce into the pan with vegetables and let bubble for 30 seconds
- Stir in cornstarch slurry and cook until the sauce thickens
- Return the cooked chicken to the pan, add drained noodles, and toss everything together for 2 minutes
- Serve immediately
Notes
For a plant-based version, replace chicken with tofu or mushrooms.
