Description

These Chipotle Lime Mexican Ribs are the ultimate finger-licking feast, perfect for cozy backyard gatherings or warm summer evenings with family. Infused with zesty citrus and smoky heat, this recipe offers a delicious twist on classic barbecue that your loved ones will absolutely crave.

Ingredients

Scale

2 Full Racks Baby Back Pork Ribs (approx. 4–5 lbs)
2 Tablespoons Smoked Paprika
1 Tablespoon Garlic Powder
1 Tablespoon Onion Powder
1 Teaspoon Ground Cumi
Kosher Salt and Black Pepper To Taste
3–4 Chipotle Peppers in Adobo, minced (plus 2 tbsp sauce)
1/2 Cup Fresh Lime Juice (approx. 3–4 limes)
2 Tablespoons Lime Zest
1/2 Cup Honey or Agave Nectar
4 Cloves Fresh Minced Garlic
1/4 Cup Fresh Cilantro, chopped

Instructions

  1. Preheat your oven to 300°F (150°C). Remove the thin membrane from the back of each rack and pat the meat dry
  2. In a small bowl, whisk together the smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Rub the mixture generously over both sides of the ribs
  3. Wrap each rack tightly in heavy-duty aluminum foil and place on a baking sheet. Bake for about 2.5 to 3 hours
  4. While the ribs are baking, prepare your glaze by simmering the minced chipotle peppers, adobo sauce, lime juice, lime zest, honey, and minced garlic in a saucepan over medium heat for 10-12 minutes until it thickens
  5. Once cooked, remove the ribs from the oven and carefully open the foil. Brush a thick layer of the glaze over the ribs
  6. Finish the ribs under the broiler for 3-5 minutes or on a preheated grill over medium-high heat until the glaze bubbles and slightly chars
  7. Serve hot, optionally brushing with one final layer of glaze before serving

Notes

Let the meat come to room temperature before cooking for even heat distribution.

Reserve a portion of the glaze to serve as a dipping sauce.
