Chocolate-Dipped Coconut Macaroons. A proposed chewy coconut macaroon baked to golden tips and dipped underneath in dark chocolate after cooling. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

Crisp tips, chewy middle, neat chocolate base
The chocolate in these macaroons belongs underneath rather than running across the top. A bitten cookie should reveal sweet coconut in the center and a thin dark base that snaps softly after setting. They are coconut macaroons—irregular mounds—not the smooth almond-sandwich cookies called macarons.
This is a newly composed working batch. Sweetened coconut brands, condensed-milk thickness and the oven's hot spots may change how the mounds hold and brown. Twenty-four cookies and the one-hour-forty-minute total are estimates to be checked, not a claim that a test tray came out perfectly.
A short ingredient list with real distinctions
The base uses a fourteen-ounce bag of sweetened shredded coconut. Unsweetened coconut is drier and less sweet; it is not a one-for-one switch here. Sweetened condensed milk is concentrated and sugary, not the thinner canned evaporated milk. Measure two-thirds cup from the can and keep the remainder out of the stated nutrition handoff.
Two egg whites loosen the mixture but are not whipped into a meringue. This changes both the look and the handling compared with stiff-peak macaroon recipes. Vanilla and a little salt season the coconut; six ounces chopped bittersweet chocolate provide the separate coating after baking.
Read the chocolate label for dairy, soy and cross-contact if guests need allergy information. The egg whites, condensed milk and coconut are explicit parts of the base, so this is neither an egg-free nor a dairy-free cookie. An unsweetened-coconut or vegan version needs its own measured recipe and picture.
Ingredients for 24 macaroons
| Ingredient | Amount | Use |
|---|---|---|
| Sweetened shredded coconut | 14 ounces | One standard bag; do not silently switch to unsweetened. |
| Sweetened condensed milk | 2/3 cup | Binder and sweetener; not evaporated milk. |
| Large egg whites | 2 whites | Whisk lightly until loose, not stiff peaks. |
| Vanilla extract | 1 teaspoon | In the coconut mixture. |
| Fine salt | 1/4 teaspoon | Balances sweetness. |
| Bittersweet chocolate, chopped | 6 ounces | For dipping cooled bases. |
Step-by-step method
- Heat oven to 325°F. Line two baking sheets with parchment. Loosen 2 large egg whites with a fork; stir with 14 oz sweetened shredded coconut, 2/3 cup sweetened condensed milk, 1 tsp vanilla and 1/4 tsp fine salt until all coconut is moistened. The mixture should mound, not flow.
- Scoop approximately 24 compact 1 1/2-tablespoon mounds onto sheets, leaving at least 1 inch between them. Press stray strands back against the sides so they do not scorch. Bake approximately 20–25 minutes, swapping sheets if the oven browns unevenly, until the tips and bottoms are golden and centers set.
- Cool on the sheets approximately 30 minutes. Melt 6 oz chopped bittersweet chocolate gently in a dry heatproof bowl over barely simmering water, or in short microwave intervals, stirring often. Dip only the bases of the completely cooled macaroons, let excess drip away and return to parchment.
- Allow chocolate to firm up about 20 minutes, longer in a warm room. Lift gently from parchment and count the actual yield; confirm coconut moisture, baked centers and set time in a kitchen trial.
How to make firm little mounds
Line two sheets and heat the oven to 325°F. Stir the lightly loosened whites with the condensed milk, vanilla and salt, then fold through all the coconut so dry patches do not remain. Use a scoop to make roughly one-and-a-half-tablespoon mounds. Compact them lightly and tuck loose strands against the sides.
Leave space for hot air even though they should not spread like a butter cookie. Bake about twenty to twenty-five minutes until tips and bottoms look golden, not deep brown all over. Rotate sheets only if needed and avoid removing pale, wet centers just because the thinnest coconut thread colored first.
Let the baked cookies cool before dipping. Heat chopped chocolate gently and keep water out of the bowl; a warm cookie would smear crumbs into the coating. Dip the underside, scrape off excess and return to clean parchment until set. The visual prompt deliberately shows dipped bottoms, not an unmeasured chocolate drizzle.
If the tray looks wrong
A puddle at the foot of a mound could mean too much condensed milk for the coconut's moisture level or insufficient compacting. Note the actual coconut brand and the volume in the test before changing ingredients. If the tips burn ahead of the center, smooth loose strands and check oven temperature.
Sticky bottoms can be underbaked or simply still warm. Cool fully on parchment, then assess. A thick chocolate foot may make lifting difficult; tap or scrape off excess coating and allow enough set time. If the kitchen is very warm, a brief covered chill can help set the chocolate, though condensation on return to room air needs testing.
Do not borrow a shelf-life promise from another macaroon formula. The published storage instructions should reflect the tested egg-and-dairy cookie and finished coating. Keep the working batch appropriately protected and have an editor confirm packaging and transport for gifts.
For a cookie plate
Set these beside Chefly's Earl Grey cookies for a contrast between chewy coconut and crisp tea-scented dough. The link is a different cookie, not an invitation to create another macaroon URL. The dark dipped bases make the coconut shape readable in a photograph even without sprinkles or holiday dye.
For advance work, baked cookies could potentially be dipped later, but the crispness and coating finish need a trial. Store in a covered container after chocolate sets and protect from heat; don't leave egg-and-dairy mixture at room temperature before baking.
Questions before dipping
Are macaroons the same as macarons?
No. This is a coconut mound; no almond flour sandwich shells or buttercream filling are in the measured recipe.
Can I use evaporated milk?
No direct swap. It is thinner and unsweetened compared with condensed milk, so the texture and sweetness would change.
Can I dip the whole cookie?
That would use more than the measured six ounces of chocolate and alter the image and yield. The base promise is a thin dipped bottom.
