Chocolate Salami with Biscuits and Nuts

Chocolate Salami with Biscuits and Nuts. A no-bake chocolate log studded with broken plain biscuits and toasted walnuts, chilled and sliced like a holiday sweet. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

A chocolate log that is a dessert

This 'salami' is a chilled chocolate, biscuit and walnut log, sliced into small rounds to show a speckled interior. It contains no meat, raw egg or alcohol in the measured formula.

The log is a working no-bake candy-style dessert, not a tested shelf-stable gift. Its four-hour chill is included in the stated total time.

Keep pieces visible

Break plain tea biscuits into small uneven pieces rather than pulverizing them. Toast walnuts briefly and cool them before folding into melted chocolate. The finished slice should show distinct pale biscuit and nut shapes.

Check the labels on chocolate and biscuits for milk, soy, wheat and other allergens; walnuts are a declared tree nut. Substituting a different cookie may change sweetness and binding.

Unsweetened cocoa powder1 tablespoonLog base.

Step-by-step method

  1. Toast 3/4 cup chopped walnuts briefly in a dry pan until fragrant and let cool. Break plain tea biscuits into two measured cups of small pieces, not fine crumbs. Line a work surface with a large sheet of parchment.
  2. Melt 8 oz chopped semisweet chocolate with 1/4 cup butter gently in a heatproof bowl over barely simmering water, keeping steam out of the bowl. Warm 1/4 cup whole milk separately and stir gradually into the smooth chocolate, followed by 1 tbsp cocoa powder.
  3. Fold in biscuit pieces and cooled walnuts until evenly coated. Spoon onto the parchment and shape into one compact log about 2 inches in diameter, twisting and sealing the paper ends. Chill at least four hours until firm enough to slice.
  4. Unwrap, dust lightly with 2 tbsp confectioners' sugar and cut approximately sixteen small slices with a sharp knife. Keep chilled until serving. Record binding, sliced pattern, firm set and actual yield in a kitchen trial; no raw egg or alcohol is used.

Melt without scorching

Use gentle heat and keep steam out of the chocolate bowl. Warm the measured milk separately so it mixes more evenly with melted chocolate and butter. Fold dry pieces only after the mixture is smooth.

Good Food offers a chocolate-salami format containing Prosecco. This separately formulated version uses no alcohol or raw egg and should not imply its source's storage behavior applies here.

Shape a compact log

The parchment helps compress one approximately two-inch-wide cylinder. Push the mix together rather than leaving air pockets that cause the slices to crumble.

Chill for at least four hours before unwrapping. If the first trial does not cut cleanly, document the chocolate brand, biscuit size and refrigerator set instead of asserting the recipe is failproof.

Slice and serve chilled

Dust the exterior lightly with confectioners' sugar and cut sixteen small rounds as a provisional yield. Keep portions chilled rather than promising room-temperature packaging.

Photography must show the biscuit-and-walnut cross-section; a plain chocolate truffle or actual cured meat is not a matching image.
