Christmas Kale Salad with Pomegranate

Christmas kale salad with pomegranate offers a cool, colorful side between the richer dishes on a holiday table. This working bowl combines softened curly kale, red pomegranate arils, orange segments, toasted pecans and a little goat cheese. A lemon-maple Dijon dressing coats the leaves rather than pooling under the fruit. It has not been kitchen-tested, so six side portions, dressing balance and the time to toast and cool the pecans need checking before publication. The captured Pinterest search change was for the broad phrase “christmas salad,” not this specific kale-and-pomegranate version.

Why massage the kale first?

Curly kale’s thick leaves can feel tough when raw. Removing the stems, chopping the leaves and briefly massaging them with part of the measured dressing makes this a salad rather than a bowl of rigid greens. Stop when the leaves darken and relax; do not knead them into wet scraps. Fold the fruit in afterward so the pomegranate arils keep their shape and the orange pieces do not break down.

Pecans get a short oven toast for aroma, then cool before they touch the goat cheese and salad. They are an actual ingredient, not decorative nuts added only for a photograph. If guests have a tree-nut allergy, this base recipe cannot be called nut-free by picking visible pecans off the plated dish; a separate, cross-contact-aware version needs planning.

Ingredients for six working side portions

Kale, fruit, pecans and goat cheese with a measured lemon-maple dressing
IngredientAmountPreparation
Curly kale, tough stems removed8 loosely packed chopped cupsWash and dry very well.
Pomegranate arils3/4 cupKeep whole; check for stray membrane.
Large orange1Peel and cut into bite-size segments.
Pecan halves1/3 cupToast 6–8 minutes, then cool.
Goat cheese, crumbled1/4 cupScatter on top; milk allergen.
Extra-virgin olive oil1/4 cupDressing.
Fresh lemon juice2 tbspDressing acid; not the orange’s juice.
Pure maple syrup1 tbspDressing sweetness.
Dijon mustard1 tspDressing body; check label.
Fine salt1/4 tspDressing seasoning.
Black pepper1/8 tspDressing seasoning.

Use a rimmed baking sheet, large bowl, small whisking bowl, knife and tongs. The eight-cup kale measure is loose after chopping; tightly packing it would produce a different greens-to-dressing ratio. Buy pomegranate arils or extract them from fruit using a clean surface, then measure three quarters of a cup. The ingredient list includes milk, tree nuts and mustard; packaged cheese and condiment labels need checking before any dietary statements.

Toast, dress and assemble

  1. Toast the nuts. Heat the oven to 350°F (175°C). Spread the measured pecan halves on a rimmed sheet and toast approximately six to eight minutes, watching for fragrance rather than letting them burn. Move them to a clean cool plate for about five minutes.
  2. Prepare produce. Wash and thoroughly dry curly kale. Strip tough stems and chop to about eight loosely packed cups. Peel and segment the orange; measure three quarters of a cup of pomegranate arils and discard stray membrane.
  3. Whisk dressing. In a small bowl, whisk the quarter cup olive oil, two tablespoons fresh lemon juice, tablespoon maple syrup, teaspoon Dijon, quarter teaspoon salt and eighth teaspoon pepper until combined. The orange is part of the salad, not an unmeasured addition to the dressing.
  4. Massage and finish. Put kale in the large bowl with about half the dressing. Massage one to two minutes until slightly darker and softer, then add the rest of the measured dressing and toss. Fold in orange and pomegranate without crushing. Sprinkle the cooled pecans and quarter cup crumbled goat cheese on top and divide into six working side servings.

The working 38-minute plan allows 25 minutes to wash, cut, whisk and assemble, about eight minutes to toast nuts, and five minutes for cooling. Some tasks overlap with the oven, so a tested elapsed time may differ. Measure actual kale and plated portions before claiming that six bowls have a fixed nutritional serving weight.

Substitutions with consequences

Walnuts would still be tree nuts and can toast differently. Pumpkin seeds could create a nut-free-ingredient variation only after checking their cross-contact label and preparation equipment; it is not the pictured pecan version. Feta has a different salt level from goat cheese, and a dairy-free cheese alternative may change moisture. Omitting goat cheese removes a milk ingredient but does not prove a dairy-free environment.

Dried cranberries are not interchangeable with fresh pomegranate arils in both texture and sweetness, and they would change the red fruit visual. Honey instead of maple makes a different dressing and changes the possibility of a plant-based adaptation. The base here is explicitly kale, pomegranate, orange, pecans and goat cheese with the measured dressing; variations need their own tests and photos.

If the salad turns watery or bitter

Water at the bottom: dry kale after washing and avoid pouring unmeasured orange juice into the bowl. Dense, tough leaves: remove thick stems and briefly massage with dressing before adding fruit. Broken pomegranate arils: fold them in last with tongs, not during massaging. Bitter or burned nuts: watch the short roast and move them off the hot sheet to cool. Too tart: record the actual lemon and fruit, then test a measured dressing adjustment rather than adding a silent extra spoonful of syrup.

Serve chilled and promptly

Put the salad beside a separate hot holiday side such as Chefly’s existing crispy roast potatoes. The creamy goat cheese and fresh fruit do not benefit from a long warm buffet. If prepping components ahead, keep the washed kale dry and the cheese chilled, then dress and top closer to serving; the exact hold time and texture still require testing. The USDA leftovers guidance supports prompt refrigeration of perishable food, not a promise that dressed leaves will remain crisp for multiple days.

Salad questions

Can I use baby kale?

It is much more tender and may not need the same massage or dressing amount. Test it as a variation before using the eight-cup curly-kale method or the same photo.

Can I make the whole salad the day before?

Separate component preparation may help, but overnight fully dressed texture has not been tested. Add pecans and goat cheese near serving so the visual contrast and texture can be evaluated in a real trial.

Is the salad vegan or nut-free?

No. This measured version contains goat cheese and pecans. Removing them requires a separate formulation and cross-contact review before making any dietary claim.

Christmas Kale Salad with Pomegranate

  • Author: Sophie Hart
  • Total Time: 38 minutes
  • Yield: 6 servings 1x

Description

Massaged kale with pomegranate arils, orange segments, toasted pecans, goat cheese and a lemon-maple Dijon dressing.

Ingredients

Scale
  • 8 loosely packed cups Curly kale, stems removed and leaves chopped
  • 3/4 cup Pomegranate arils
  • 1 large orange Orange, peeled and cut into bite-size segments
  • 1/3 cup Pecan halves
  • 1/4 cup Goat cheese, crumbled
  • 1/4 cup Extra-virgin olive oil for dressing
  • 2 tablespoons Fresh lemon juice
  • 1 tablespoon Pure maple syrup
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon Fine salt
  • 1/8 teaspoon Black pepper

Instructions

  1. Heat oven to 350 F (175 C). Spread 1/3 cup pecan halves on a rimmed sheet and toast about 6–8 minutes until fragrant, watching closely. Transfer to a cool plate for about 5 minutes; keep nuts away from guests with tree-nut allergies and avoid cross-contact.
  2. Wash and thoroughly dry kale, remove tough stems and chop to approximately 8 loosely packed cups. Peel and cut the orange into bite-size segments, catching excess juice separately; measure 3/4 cup pomegranate arils.
  3. Whisk 1/4 cup olive oil, 2 tablespoons lemon juice, 1 tablespoon maple syrup, 1 teaspoon Dijon, 1/4 teaspoon fine salt and 1/8 teaspoon black pepper until combined.
  4. Add kale to a large clean bowl and drizzle with about half the measured dressing. Massage for approximately 1–2 minutes until leaves soften and darken slightly; add remaining dressing and toss. Fold in orange and pomegranate, then scatter cooled toasted pecans and 1/4 cup crumbled goat cheese on top. Divide into six working side portions and serve promptly.
