Description

Cilantro Lime Chicken and Rice is a quick and flavorful weeknight meal that combines chicken, rice, lime, and cilantro for a delicious one-pot dinner.


Ingredients

1.5 lbs Boneless Skinless Chicken Thighs
1.5 cups Long-Grain White Rice
3 cups Chicken Broth
2–3 Fresh Limes
1 large bunch Fresh Cilantro
2 tbsp Olive Oil
4–5 cloves Garlic
1 medium Onio
1 tsp Salt
1/2 tsp Black Pepper
1 tsp Cumi
1/2 tsp Chili Powder
Optional Garnish: Avocado, red onion, hot sauce


Instructions

  1. Pat your chicken thighs dry, cut into 1-inch pieces, and season with salt, pepper, cumin, and chili powder
  2. Heat olive oil in a skillet, add chicken in a single layer, and cook until browned
  3. Reduce heat, add remaining olive oil, sauté onion until soft, then add garlic
  4. Stir in uncooked rice, toast for 2 minutes, then add chicken broth, salt, pepper, cumin, chili powder, and lime zest
  5. Bring to a boil, return chicken to the skillet, cover, and simmer for 18-20 minutes
  6. Stir in lime juice and half the cilantro, fluff with a fork
  7. Let rest for 5 minutes, garnish with remaining cilantro, and serve

Notes

For a dairy-free version, omit cheese and use vegetable broth.

To increase spice, add cayenne pepper or jalapeño when sautéing onions and garlic.
