A warm and nourishing Comforting Chinese Rice Soup that is quick and easy to make, perfect for busy weeknights. This recipe combines jasmine rice, chicken broth, and tender chicken with ginger and garlic for a soothing experience.
Ingredients
1 cup Jasmine Rice
6 cups Chicken Broth
1 cup Cooked Chicken Breast
1 inch Ginger
2 cloves Garlic
1 tsp Sesame Oil
1–2 tbsp Soy Sauce
2 stalks Green Onions
Salt & White Pepper to taste
1 cup Spinach or Bok Choy
Instructions
- Wash the jasmine rice under cold water until the water runs clear and drain well
- In a large pot or Dutch oven, combine the washed rice, chicken broth, sliced ginger, and minced garlic. Bring to a boil over medium-high heat
- Reduce heat to low, cover the pot, and let it simmer for 20-25 minutes, stirring occasionally
- Stir in the shredded cooked chicken and any optional vegetables. Continue to simmer for another 3-5 minutes
- Remove from heat and stir in sesame oil and soy sauce. Adjust seasoning with salt and white pepper
- Ladle into bowls and garnish with chopped green onions. Serve immediately
Notes
Ensure to wash the rice to prevent a gummy texture.
Use low-sodium chicken broth for a healthier option.
