Description

Cottage Cheese Alfredo with Chicken is a healthier version of the classic Alfredo pasta, using cottage cheese instead of heavy cream to create a creamy, protein-packed sauce that is perfect for busy families and fitness enthusiasts.

1 lb Chicken Breast
2 cups Cottage Cheese
12 oz Pasta
1/2 cup Parmesan Cheese
3 cloves Fresh Garlic
1/4 cup Chicken Broth or Pasta Water
1 tbsp Olive Oil
Salt & Black Pepper to taste
1 tsp Italian Seasoning (optional)


Instructions

  1. Prepare the pasta by bringing a large pot of salted water to a boil. Cook according to package instructions until al dente, reserving half a cup of pasta water before draining
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and Italian seasoning. Cook until golden brown and cooked through, then remove from the pa
  3. In the same skillet, reduce heat to medium and sauté minced garlic for about 1 minute until fragrant
  4. Blend the cottage cheese, Parmesan, and sautéed garlic in a high-speed blender until completely smooth
  5. Reduce skillet heat to low, add the cooked pasta and blended sauce, and toss gently
  6. Adjust the sauce's consistency with reserved pasta water as needed. Add the cooked chicken back to the skillet and toss to combine before serving

Notes

For creaminess, use full fat or 2% cottage cheese.

Keep pasta water on the side to adjust sauce consistency.

Avoid high heat once the sauce is added to prevent separation.
