Description

Creamy Chicken and Tortellini Soup is a heartwarming dish that combines tender chicken pieces, rich broth, and creamy cheese-filled tortellini, making it an ideal meal for chilly evenings and a family favorite.

Ingredients

Scale

1.5 lbs Boneless, Skinless Chicken Breasts or Thighs, cut into 1-inch pieces
20 oz Fresh or Frozen Cheese Tortellini
2 tbsp Olive Oil
1 medium Yellow Onion, finely diced
4 cloves Garlic, minced
2 medium Carrots, peeled and diced
2 medium Celery Stalks, diced
6 cups Chicken Broth or Stock
1 cup Heavy Cream
1 tsp Dried Italian Seasoning
5 oz Fresh Spinach, roughly chopped
Salt, to taste (start with 1 tsp)
Black Pepper, to taste, freshly ground
2 tbsp Fresh Parsley, chopped, for garnish
Parmesan Cheese, for serving, freshly grated

Instructions

  1. Pat your chicken pieces dry with paper towels and season them generously with salt and pepper
  2. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the chicken in a single layer and sear for 3-4 minutes per side until golden brown. Remove from pot and set aside
  3. Reduce heat to medium, add a little more olive oil if needed, and sauté the diced onion, carrots, and celery for 5-7 minutes until softened
  4. Stir in the minced garlic and Italian seasoning, cooking for another minute until fragrant
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pot. Bring to a gentle simmer
  6. Return the cooked chicken to the pot, reduce heat to low, cover, and simmer for 10-15 minutes
  7. Increase heat to medium-low, add tortellini, and cook according to package directions until al dente
  8. Remove from heat, stir in the heavy cream and fresh spinach until wilted
  9. Taste and adjust seasonings with additional salt and pepper, then serve garnished with fresh parsley and grated Parmesan cheese

Notes

Do not overcook the tortellini as it can become mushy.

For a creamier soup, adjust the amount of heavy cream to taste.

This soup stores well and can be reheated gently on the stovetop or in the microwave.
