Description

Creamy Gnocchi with Spinach and Feta is a quick and comforting dish that can be prepared in just 20 minutes. It combines soft gnocchi with wilted spinach and creamy feta for a delightful meal.


Ingredients

16 oz Potato Gnocchi
5 cups Fresh Baby Spinach
4 oz Feta Cheese
1 cup Heavy Cream
2 tbsp Unsalted Butter
3 cloves Garlic
1 medium Shallot
1/4 cup Parmesan Cheese
1 tsp Lemon Zest
1/2 tsp Red Pepper Flakes
Salt & Black Pepper to taste


Instructions

  1. Boil the gnocchi according to package instructions in a large pot of salted water
  2. In a large skillet, melt the butter over medium heat. Add the shallots and sauté until translucent
  3. Add minced garlic and red pepper flakes, cooking until fragrant
  4. Pour in the heavy cream and simmer for 2-3 minutes until thickened, whisking in Parmesan cheese
  5. Add the spinach in batches, stirring until wilted
  6. Fold in the cooked gnocchi, crumbled feta, and lemon zest, adjusting thickness with reserved pasta water if necessary
  7. Season with salt and pepper to taste and serve immediately

Notes

Use high-quality feta for the best melting texture.

For a gluten-free version, substitute gnocchi with cauliflower-based or gluten-free varieties.
