12 oz Penne Pasta
1 lb Ground Italian Sausage
1 tbsp Olive Oil
1 medium Onion, finely chopped
4–5 cloves Garlic, minced
1/2 cup Sun-Dried Tomatoes, drained and thinly sliced
5 oz Fresh Spinach, roughly chopped
1 cup Chicken Broth, low sodium
1 cup Heavy Cream
1/2 cup Parmesan Cheese, freshly grated
Salt, to taste
Black Pepper, to taste
1/2 tsp Red Pepper Flakes, optional
Fresh Basil or Parsley, for garnish


Instructions

  1. Start a large pot of salted water boiling for the pasta. Cook the pasta according to package directions until al dente. Reserve about 1 cup of the starchy pasta water before draining
  2. In a large skillet, heat olive oil over medium-high heat. Add the ground Italian sausage and cook until browned
  3. Reduce heat to medium, add chopped onion, and sauté until softened. Stir in minced garlic and red pepper flakes, cooking until fragrant
  4. Add sun-dried tomatoes and spinach, cooking until spinach wilts
  5. Pour in chicken broth and heavy cream, bringing to a simmer. Season with salt and pepper
  6. Add the cooked pasta and Parmesan cheese, tossing to combine. Adjust sauce consistency with reserved pasta water if necessary
  7. Serve hot, garnished with extra Parmesan cheese and fresh herbs
