4 Chicken Breasts (about 1.5 lbs)
2 tbsp Olive Oil
4–5 cloves Garlic, minced
1 large Shallot, finely diced
1 cup Chicken Broth (low sodium)
1 cup Full-Fat Coconut Milk
1/2 cup Sun-Dried Tomatoes, chopped
1/4 cup Parmesan Cheese, freshly grated (optional)
5–6 oz Fresh Spinach, washed and roughly chopped
1/4 cup Fresh Basil, chopped
1 tsp Dried Italian Seasoning
Salt, to taste
Black Pepper, to taste


Instructions

  1. Pat the chicken breasts dry and pound them to about ½-inch thickness. Season both sides with salt, pepper, and ½ teaspoon of Italian seasoning
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 3-5 minutes on each side until golden brown. Remove from the skillet and set aside
  3. In the same skillet, reduce heat to medium and sauté diced shallots for 2-3 minutes until softened. Add minced garlic and cook for another minute
  4. Add chicken broth to deglaze the pan, scraping up any browned bits. Bring to a gentle simmer for 2 minutes
  5. Stir in the coconut milk and sun-dried tomatoes, and add the remaining Italian seasoning. Allow to simmer
  6. Fold in the spinach a handful at a time until wilted. If using, stir in Parmesan until melted
  7. Return the chicken to the skillet and let it simmer in the sauce for another 5-7 minutes
  8. Garnish with fresh basil and serve immediately
