Description

Crispy Chicken Tikka Masala Salad combines a crunchy salad base with flavorful Indian-inspired fried chicken, creating a perfect balance of healthy and comfort food.


Ingredients

1.5 lbs Chicken Breast or Thighs (Bite-sized)
1/2 cup Greek Yogurt (Plain)
1 tbsp Garam Masala
1 tbsp Cumi
1 tbsp Turmeric
1 cup Panko Breadcrumbs
6 cups Romaine or Mixed Greens
1 cup Cucumber (chopped)
1 cup Cherry Tomatoes (halved)
1 cup Red Onion (sliced)
Lemon Juice (to taste)
Olive Oil (to taste)
Honey (to taste)
Ginger (to taste)


Instructions

  1. Marinate the Protein: Whisk together the Greek yogurt, lemon juice, garlic, ginger, and half of the tikka masala spices. Toss the chicken in this mixture for at least 30 minutes
  2. Prepare the Coating: Mix the panko breadcrumbs with remaining spices. Press chicken pieces into breadcrumbs for a thick layer
  3. Fry Until Golden: Heat oil in a skillet over medium-high heat. Fry chicken until golden brown and internal temperature is 165°F. Set aside on a wire rack
  4. Whisk the Dressing: Combine olive oil, lemon juice, honey, and a pinch of cumin in a jar and shake well
  5. Assemble the Salad: Place greens in a serving bowl and layer cucumbers, tomatoes, and onions. Drizzle with half the dressing and toss gently
  6. The Final Touch: Top with warm crispy chicken, drizzle with remaining dressing, and garnish with cilantro or mint before serving

Notes

For gluten-free, substitute panko breadcrumbs with crushed cornflakes or gluten-free breadcrumbs.

For vegetarian, substitute chicken with firm tofu or cauliflower florets.
