Ingredients
1 pound Ground Beef (80/20 lean)
1 medium Yellow Onion, finely diced
3 cloves Garlic, minced
1 tbsp Chili Powder
1 tsp Cumi
1 tsp Smoked Paprika
½ tsp Oregano (dried)
¾ tsp Salt (or to taste)
½ tsp Black Pepper (or to taste)
¼ cup Beef Broth or Water
1 tbsp Tomato Paste
18–24 (6-inch) Corn or Small Flour Tortillas
1 cup Shredded Monterey Jack or Mexican Blend Cheese (optional, but recommended)
3–4 cups Vegetable Oil or Canola Oil, for frying
Instructions
- In a large skillet or Dutch oven, brown the ground beef over medium-high heat. Drain any excess grease
- Add the finely diced yellow onion and cook until softened. Stir in the minced garlic
- Sprinkle in the chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Toast for 1-2 minutes
- Stir in the tomato paste and beef broth. Simmer for 5-7 minutes, then remove from heat and stir in cheese if using
- Warm tortillas in the microwave or dip in warm oil to make them pliable
- Lay each tortilla flat, add about 2 tablespoons of beef filling, and roll tightly
- Heat oil in a skillet. Fry flautas seam-side down for 2-3 minutes per side until golden brown and crispy
- Remove flautas and drain on paper towels. Serve immediately
Notes
Make sure to properly warm the tortillas to prevent them from cracking when rolling.
