Ingredients
2 racks St. Louis Style Pork Ribs
1/2 cup Brown Sugar
3 tablespoons Smoked Paprika
2 tablespoons Garlic Powder
1 tablespoon Onion Powder
1 tablespoon Black Pepper
1 tablespoon Kosher Salt
1 tablespoon Chili Powder
1/2 teaspoon Cayenne Pepper
2 tablespoons Yellow Mustard
Instructions
- Prepare your workstation and pat the ribs dry with paper towels
- Remove the membrane from the back of the ribs
- Apply a thin coat of yellow mustard over both sides of the rack
- Mix together the dry rub ingredients and coat the ribs generously
- Preheat oven or smoker to 275°F (135°C)
- Bake the ribs for approximately 3 to 4 hours until the internal temperature reaches 195°F to 203°F
- Tent with foil if sugar darkens too quickly and let the ribs rest for at least 15 minutes before serving
Notes
Using a meat thermometer provides more accuracy for doneness.
Letting the rub sit overnight will enhance the flavor.
Spritz with apple juice and water for added moisture during smoking.
