Description
Egg Roll in a Bowl (Ground Turkey Style) is a quick and healthy alternative to traditional egg rolls, packed with flavor and nutrients, and made with ground turkey and fresh vegetables.
Ingredients
1 tablespoon Sesame Oil
1 pound Ground Turkey (93% lean or leaner)
1 Yellow Onion, chopped
3 cloves Garlic, minced
1 tablespoon Fresh Ginger, grated
1 bag (16 ounces) Coleslaw Mix (shredded cabbage and carrots)
½ cup Low-Sodium Soy Sauce
2 tablespoons Rice Vinegar
1 tablespoon Brown Sugar
1 teaspoon Sriracha or Chili Garlic Sauce (optional)
Green Onions, chopped (for garnish)
Sesame Seeds (for garnish)
Instructions
- Heat a large skillet or wok over medium-high heat. Add sesame oil
- Add ground turkey to the skillet. Cook until browned and no pink remains, about 5-7 minutes
- Push the turkey to the side, add chopped onion to the other side, and sauté for 3-4 minutes. Then add minced garlic and grated ginger, cooking for another minute
- Mix turkey, onion, garlic, and ginger together in the skillet
- Add coleslaw mix. Stir constantly for about 5-7 minutes until the cabbage softens but is still crunchy
- In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, and Sriracha
- Pour sauce over the turkey-vegetable mixture and stir to coat. Cook for an additional 1-2 minutes
- Serve garnished with chopped green onions and sesame seeds
