Ingredients
1.5 lbs Fresh or Frozen Shrimp (peeled/deveined)
2 cups Ritz or Saltine Crackers (crushed)
1/2 cup Melted Butter
3 large Eggs (beaten)
1 cup Heavy Cream or Half-and-Half
1/2 cup Bell Pepper (diced)
1/4 cup Green Onions (sliced)
1 tablespoon Old Bay Seasoning
1 tablespoon Lemon Juice
1 cup Shredded Cheddar Cheese
Instructions
- Preheat your oven to 350°F (175°C) and grease your pie dish
- Mix crushed crackers with melted butter and press into the bottom and up the sides of your pie plate
- Bake the crust for about 8 minutes to set
- In a large bowl, whisk together the eggs, heavy cream, Old Bay seasoning, and lemon juice
- Fold in diced bell peppers, green onions, and half of the shredded cheese
- Add shrimp to the mixture and stir gently
- Pour the filling into the prepared crust, spread evenly, and sprinkle the remaining cheese on top
- Bake for 35 to 40 minutes until the center is firm and edges are golden brow
- Allow the pie to rest for at least 10 minutes before slicing
