French Onion Chicken Orzo Casserole combines the rich flavors of French onion soup with chicken and orzo pasta into a hearty meal.
Ingredients
3 large Yellow Onions (thinly sliced)
1.5 lbs Chicken Breast or Thighs (bite-sized)
1.5 cups Dry Orzo Pasta
3.5 cups Beef Broth (low sodium)
2 cups Gruyère Cheese (shredded)
2 tbsp Unsalted Butter
2 tbsp Olive Oil
Fresh Thyme (to taste)
Salt (to taste)
Black Pepper (to taste)
1/4 cup Dry White Wine or Sherry
Instructions
- Heat the butter and olive oil in a large, oven-safe skillet over medium heat. Add the sliced onions and a pinch of salt. Cook the onions slowly for at least 25 minutes until a deep, mahogany brow
- Increase the heat to medium-high. Add the chicken pieces and season with salt, pepper, and fresh thyme. Sear until light golden crust forms
- Pour in the white wine or sherry to deglaze the pan, scraping the bottom to incorporate all flavorful bits
- Add the dry orzo to the skillet and stir for two minutes to toast slightly
- Pour in the beef broth and bring to a gentle simmer. Cover and transfer to a preheated oven at 375°F (190°C) for 15 to 18 minutes
- Remove from oven and sprinkle shredded Gruyère cheese over the top. Switch to broil and return to oven for 2 to 3 minutes until cheese bubbles and browns
Notes
Use a heavy-bottomed skillet for even heat distribution.
Use fresh herbs for better flavor.
Add a splash of hot broth if the casserole seems too dry before adding cheese.
