Ingredients
1 medium head Green Cabbage
14–16 oz Smoked Sausage
1 large Yellow Onio
3 cloves Garlic
2 tablespoons Unsalted Butter
1 tablespoon Olive Oil
1 teaspoon Cajun Seasoning
To taste Salt and Black Pepper
1 tablespoon Apple Cider Vinegar
Instructions
- Prep the Cabbage: Start by removing any wilted outer leaves from your cabbage. Cut the head in half and remove the tough core. Slice the cabbage into half-inch ribbons
- Brown the Sausage: Slice your smoked sausage into rounds or half-moons. Heat the olive oil in a large skillet over medium-high heat. Add the sausage and cook until it develops a deep, caramelized crust on both sides. Remove the sausage and set it aside
- Sauté the Aromatics: In the same pan, melt the butter into the sausage drippings. Add the diced onions and sauté until translucent. Stir in the minced garlic and cook for 30 seconds until fragrant
- Fry the Cabbage: Add the sliced cabbage to the pan in batches, stir to coat it in the butter and sausage fat, and cook for 10-12 minutes until the cabbage is tender but still retains a slight crunch
- Combine and Season: Return the sausage to the pan. Sprinkle with Cajun seasoning, salt, and pepper. Stir in the apple cider vinegar and toss everything together for another 2 minutes
- Final Touch: Taste and adjust seasoning if necessary. Serve immediately while hot
Notes
