Description

Garlic Mashed Cauliflower is a velvety, savory side dish that transforms an ordinary weeknight dinner into something extraordinary. Infused with roasted garlic, butter, cream, and optionally Parmesan cheese, this dish offers a creamy, low-carb alternative to traditional mashed potatoes, making it suitable for various dietary preferences.

Ingredients

Scale

2 medium heads Cauliflower
1 whole head Garlic
4 tablespoons Unsalted Butter
1/4 cup Heavy Cream
2 tablespoons Cream Cheese
1/4 cup Parmesan Cheese
1 teaspoon Salt
1/2 teaspoon Black Pepper
2 tablespoons Fresh Parsley or Chives
1 tablespoon Olive Oil

Instructions

  1. Step 1: Prepare and roast the garlic by preheating the oven to 400°F (200°C) and wrapping the garlic head in foil with olive oil before roasting
  2. Step 2: Prepare the cauliflower by washing it and cutting it into florets
  3. Step 3: Cook the cauliflower by steaming it until fork-tender or boiling it and ensuring it is well-drained
  4. Step 4: Mash the cauliflower with roasted garlic, butter, cream, cream cheese, salt, and pepper, using a blender or masher
  5. Step 5: Finish and season by stirring in Parmesan cheese and adjusting the seasonings
  6. Step 6: Serve garnished with parsley or chives

Notes

Allow leftovers to cool before refrigerating. Reheat gently with a splash of cream or milk.
