Gingerbread Syrup for Coffee. A small-batch gingerbread coffee syrup infused with fresh ginger, a cinnamon stick, cloves and regular molasses. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

Spiced syrup, not a latte
This is a concentrate to spoon into coffee, not a complete milk-based latte recipe. Light brown sugar and a modest amount of regular molasses carry gingerbread flavor, while whole cinnamon and cloves and sliced fresh ginger infuse during a short simmer.

The draft yields a provisional cup, or sixteen one-tablespoon portions. Evaporation and the amount left in the strainer can move that figure. It has not been made, tasted, measured or storage-tested.
Why whole spices here
A cinnamon stick and three counted cloves can be removed after steeping, leaving a clearer syrup than a large amount of ground spice. Thinly sliced ginger likewise strains out. Count the cloves when they go in and again when they come out.
Use regular unsulfured molasses in the measured base, not blackstrap, whose stronger bitter edge could overwhelm a tablespoon of coffee syrup. An Edible Mosaic provides a related ground-spice syrup reference; the infusion and proportions here are a separate working version.
Ingredients for 16 tablespoons of syrup
| Ingredient | Amount | Use |
|---|---|---|
| Water | 1 cup | Syrup base. |
| Packed light brown sugar | 3/4 cup | Dissolve fully. |
| Regular unsulfured molasses | 2 tablespoons | Not blackstrap in this working version. |
| Fresh ginger, thinly sliced | 1 tablespoon | Strain after infusion. |
| Cinnamon stick | 1 stick | Strain after infusion. |
| Whole cloves | 3 cloves | Count and remove all three. |
| Fine salt | 1/8 teaspoon | Syrup base. |
Step-by-step method
- Combine 1 cup water, 3/4 cup packed light brown sugar, 2 tbsp regular unsulfured molasses, 1 tbsp thinly sliced fresh ginger, one cinnamon stick, three whole cloves and 1/8 tsp fine salt in a small saucepan. Stir over medium heat until sugar dissolves.
- Bring to a gentle simmer, then reduce heat to avoid boiling over. Simmer approximately 12 minutes, stirring occasionally, until the spice scent is evident and the syrup coats a spoon lightly. Do not try to caramelize it to a hard-candy temperature.
- Take off heat and steep about 10 minutes. Strain through a fine mesh into a heatproof measure, ensuring all three cloves and ginger pieces are removed. Cool about 30 minutes before transferring to a clean covered jar; measure actual finished volume.
- For a starting serving, stir one tablespoon of cooled syrup into a mug of hot brewed coffee, which is a separate beverage ingredient and not part of the bottled syrup yield. Refrigerate the prepared syrup and confirm storage handling and flavor in a kitchen trial before gifting.
Simmer and steep
Stir until the brown sugar dissolves, then let the syrup simmer gently rather than boil hard. The proposed twelve minutes concentrates flavor, and ten minutes off heat lets the whole spices continue to infuse. A pan left on high heat may thicken too far and alter the final cup count.
Strain into a heatproof measure before pouring into a clean covered jar. Do not seal a hot jar as though this were a tested canned preserve; it is a fresh refrigerated syrup and not a shelf-stable gift.
Adjusting a first test cup
Start with one tablespoon in a mug of brewed coffee and taste. If the spice overwhelms, record the coffee volume and syrup amount, then adjust the next batch rather than claiming one spoon suits every roast.
Cloudiness from ground spice should not occur with the listed whole-spice method, but suspended molasses solids or unstrained ginger could remain. Strain carefully; do not promise a perfectly clear syrup without seeing a test batch.
Cold storage and serving
Refrigerate the covered syrup after cooling. No exact shelf life, gift-shipping period or bottling claim is established for this untested formulation. Coffee, milk or espresso used to serve it would need its own measured drink card if marketed as a latte.
A tiny jar beside a mug illustrates the intended use; the image should not show a foamy latte, whipped cream or whole cloves left in the ready-to-use syrup.
Syrup questions
Does this contain coffee?
No. It is syrup to add to a separately brewed mug.
Can I use blackstrap molasses?
The measured formula uses regular unsulfured molasses; blackstrap changes the strength and needs a separate trial.
Can it be stored in the pantry?
No shelf-stable process has been developed. Keep it refrigerated and verify keeping quality before publishing a storage window.
