Description

Greek Chicken Souvlaki Bowls are a delicious and easy-to-make dish bursting with fresh, vibrant flavors that transport you to a sunny Greek island. With a flexible recipe, you can customize the bowls to suit your preferences and enjoy a healthy meal prep option.


Ingredients

1 ½ lbs Boneless, Skinless Chicken Breasts or Thighs
¼ cup Olive Oil
Juice of 1 Large Lemo
2 cloves Garlic, minced
1 tbsp Dried Oregano
1 tsp Dried Dill
½ tsp Salt
¼ tsp Black Pepper
1 cup Plain Greek Yogurt
½ English Cucumber, grated & squeezed dry
1 clove Garlic, minced
1 tbsp Fresh Dill, chopped
1 tbsp Fresh Lemon Juice
4 cups Cooked Quinoa or Rice
1 Large Tomato, diced
½ Red Onion, thinly sliced
½ English Cucumber, diced
½ cup Kalamata Olives, pitted & halved
¼ cup Crumbled Feta Cheese
Fresh Parsley or Mint, chopped (optional)


Instructions

  1. Cut chicken into 1-inch cubes and marinate in a mixture of olive oil, lemon juice, minced garlic, oregano, dill, salt, and pepper for at least 30 minutes
  2. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, and season with salt and pepper to make tzatziki sauce
  3. Cook quinoa or rice according to package directions
  4. Preheat a skillet over medium-high heat and cook marinated chicken until golden brown and cooked through, about 4-6 minutes per side
  5. Assemble bowls with quinoa or rice, cooked chicken, diced tomato, red onion, diced cucumber, Kalamata olives, crumbled feta, and tzatziki sauce

Notes

Marinate chicken longer for more flavor.

Squeeze cucumber to avoid watery tzatziki.

Cook chicken in batches to ensure even browning.
