Ingredients
1.5 lbs Ground Beef
1 large Yellow Onio
3 cloves Garlic
3 cups Yukon Gold Potatoes
4 cups Beef Broth
1 cup Dill Pickles
2 cups Cheddar Cheese
2 tbsp Yellow Mustard
1/4 cup Ketchup
1/2 cup Heavy Cream
1 tbsp Sesame Seeds
Instructions
- In a large Dutch oven or heavy-bottomed pot, cook the ground beef over medium-high heat, breaking it into small crumbles as it browns
- Add the diced onions to the pot and sauté until translucent. Stir in the minced garlic and cook for another minute
- Pour in the beef broth, scraping the bottom of the pot to release flavorful browned bits. Add the potatoes, ketchup, mustard, and a splash of pickle juice. Bring to a gentle boil
- Reduce heat to low and cover the pot. Let the soup simmer for 15-20 minutes or until the potatoes are fork-tender
- Stir in the heavy cream and chopped dill pickles. Gradually add the shredded cheddar cheese, stirring constantly until melted
- Taste and adjust seasoning with salt and pepper. Serve hot, garnished with extra pickles, lettuce, and sesame seeds
