Description

Ground Turkey and Black Bean Tacos are a delicious and easy-to-make meal that is flavorful, healthy, and customizable. This dish features lean ground turkey, hearty black beans, aromatic spices, and can be prepared in under 30 minutes.


Ingredients

1 tablespoon Olive Oil
1 lb Ground Turkey (93% lean or higher)
1 medium Onion, diced
2 cloves Garlic, minced
1 (15-ounce) can Black Beans, rinsed and drained
1 (14.5-ounce) can Diced Tomatoes, undrained
1/2 cup Chicken Broth (or Water)
2 tablespoons Chili Powder
1 teaspoon Cumi
1/2 teaspoon Smoked Paprika
1/4 teaspoon Cayenne Pepper (optional)
Salt and freshly ground Black Pepper, to taste
12–16 small Flour or Corn Tortillas
Your favorite taco toppings (shredded lettuce, cheese, sour cream, salsa, avocado, cilantro, etc.)


Instructions

  1. Prep your ingredients by dicing the onion, mincing the garlic, and rinsing the black beans
  2. Heat a large skillet over medium-high heat and add olive oil
  3. Add ground turkey to the skillet and cook, breaking it up, until browned (about 5-7 minutes)
  4. Push turkey to the side and add onions. Cook until translucent, about 3-4 minutes; add garlic and cook for another minute
  5. Stir in chili powder, cumin, smoked paprika, and cayenne pepper if using; cook for 1 minute
  6. Pour in black beans, diced tomatoes, and chicken broth, stirring to combine
  7. Bring to a simmer, then cover and cook on low for 10-15 minutes, stirring occasionally
  8. Taste the filling and adjust seasoning as needed
  9. Warm tortillas in a dry skillet or microwave
  10. Fill tortillas with turkey and bean mixture and enjoy with desired toppings

Notes

For a vegetarian option, double the black beans or use lentils or tofu.
