Description

These Hawaiian BBQ Chicken Skewers are a burst of tropical flavor, featuring tender chicken and sweet-tart pineapple. Perfect for busy weeknights, they require minimal prep and cook time.


Ingredients

1.5 lbs Boneless, Skinless Chicken Breasts or Thighs, cut into 1-inch cubes
1 small Fresh Pineapple, cored and cut into 1-inch chunks
1 Red Bell Pepper, cut into 1-inch pieces
1 Green Bell Pepper, cut into 1-inch pieces
1/2 Red Onion, cut into 1-inch pieces
1/4 cup Soy Sauce (low sodium)
2 tablespoons Brown Sugar (packed)
1/4 cup Ketchup
2 tablespoons Pineapple Juice
1 tablespoon Rice Vinegar
1 tablespoon Fresh Ginger, grated
2 cloves Garlic, minced
1 teaspoon Sriracha (optional), or to taste
1 teaspoon Sesame Oil
10–12 Wooden or Metal Skewers
1 tablespoon Olive Oil, for grilling/baking
Optional: Sesame Seeds, for garnish
Optional: Fresh Cilantro, chopped, for garnish


Instructions

  1. Soak wooden skewers in water for at least 30 minutes
  2. Cut chicken, pineapple, bell peppers, and red onion into 1-inch pieces
  3. Whisk together the soy sauce, brown sugar, ketchup, pineapple juice, rice vinegar, ginger, garlic, Sriracha, and sesame oil in a medium bowl
  4. Add cubed chicken to half of the sauce, toss to coat, and marinate for at least 15 minutes
  5. Thread chicken, pineapple, bell peppers, and onion onto the skewers, alternating ingredients
  6. Preheat your cooking method: grill to medium-high heat, oven to 400°F, or air fryer to 375°F
  7. Cook skewers on the grill for 10-15 minutes, in the oven for 20-25 minutes, or in the air fryer for 12-18 minutes, basting with reserved sauce near the end
  8. Let skewers rest for 5 minutes before serving and garnish if desired

Notes

For a gluten-free version, use tamari instead of soy sauce.
