2 medium Ripe Avocados
3 medium Roma Tomatoes
1 cup English Cucumber
1/4 cup Red Onio
1/2 cup Fresh Cilantro
3 tbsp Fresh Lime Juice
1 tbsp Extra Virgin Olive Oil
1/2 tsp Garlic Powder
1/4 tsp Smoked Paprika
Salt & Black Pepper to taste


Instructions

  1. Pat the shrimp dry and season with salt, pepper, garlic powder, and smoked paprika
  2. Heat olive oil in a skillet over medium-high heat and cook shrimp for about 2 minutes per side until opaque and pink. Let cool
  3. In a large bowl, combine diced tomatoes, cucumber, red onion, and cilantro
  4. Add cooled shrimp to the bowl, then gently fold in diced avocado and lime juice
  5. Drizzle with more olive oil if desired and season with extra salt and pepper before serving
