Description

This Hearty Vegetable Beef Soup is a comforting dish packed with tender beef and vibrant vegetables, perfect for chilly days.


Ingredients

2 pounds Boneless beef chuck roast, trimmed and cut into 1-inch cubes
2 tablespoons Olive oil
1 teaspoon Salt
1/2 teaspoon Black pepper
1 large Yellow onion, chopped
3 Celery stalks, chopped
3 large Carrots, peeled and sliced
4 cloves Garlic, minced
8 cups Beef broth (low sodium preferred)
1 (14.5 ounce) can Canned diced tomatoes, undrained
2 tablespoons Tomato paste
1 tablespoon Worcestershire sauce
2 Dried bay leaves
1 teaspoon Dried thyme
1 teaspoon Dried oregano
2 large Potatoes (Yukon Gold or Russet), peeled and diced
1 cup Green beans, trimmed and cut into 1-inch pieces (fresh or frozen)
1 cup Frozen corn kernels
Fresh parsley, chopped (for serving)


Instructions

  1. Prepare the Beef: Pat beef cubes dry with paper towels and season with salt and black pepper
  2. Sear the Beef: Heat olive oil in a large pot over medium-high heat and brown the beef cubes on all sides, then remove and set aside
  3. Sauté the Aromatics: Add chopped onion, carrots, and celery to the pot, cooking until softened
  4. Add Garlic and Tomato Paste: Stir in minced garlic and tomato paste, cooking for 1-2 minutes
  5. Deglaze the Pot: Pour in a splash of beef broth and scrape up any browned bits
  6. Combine Ingredients: Return beef to the pot, add remaining broth, diced tomatoes, Worcestershire sauce, bay leaves, thyme, and oregano
  7. Simmer: Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beef is tender
  8. Add Remaining Vegetables: Stir in diced potatoes, green beans, and corn, cooking for another 20-30 minutes
  9. Taste and Adjust: Remove bay leaves and adjust seasonings as needed
  10. Serve: Ladle soup into bowls and garnish with fresh parsley

Notes

For a thicker soup, you can mash some potatoes and stir them back in.
