Description

Ingredients

1 ¾ cups Granulated sugar
1 tablespoon Baking powder

1 cup Unsalted butter, softened
4 Large eggs
2 teaspoons Vanilla extract
1 ¼ cups Buttermilk
8 ounces White chocolate, chopped
1 ½ cups Fresh raspberries
2 cups Heavy cream
1 cup Powdered sugar
8 ounces Cream cheese, softened
½ cup Raspberry preserves or jam


Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt
  3. In another bowl, beat the softened butter and eggs until light and fluffy
  4. Add vanilla extract to the butter and egg mixture
  5. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, mixing until just combined
  6. Gently fold in the chopped white chocolate and fresh raspberries
  7. Divide the batter between the two prepared pans
  8. Bake for 30-35 minutes until a toothpick comes out clea
  9. Cool the cakes in the pans for 10-15 minutes, then invert onto a wire rack to cool completely
  10. To make the frosting, beat heavy cream until stiff peaks form. In another bowl, beat cream cheese until smooth, then add powdered sugar and mix until fluffy. Fold in the whipped cream
  11. Once the cakes are cool, spread raspberry preserves on top of one layer, followed by frosting. Place the second layer on top and frost the top and sides of the cake
  12. Decorate with fresh raspberries and white chocolate shavings if desired
