Description

This High-Protein Chicken Cobb Pasta Salad combines the classic flavors of a California Cobb with the heartiness of pasta, making it a balanced, protein-packed meal perfect for families.


Ingredients

12 oz High-Protein Pasta
2 cups Cooked Chicken Breast
4 large Hard-Boiled Eggs
6 slices Crispy Baco
1 cup Cherry Tomatoes
1 large Avocado
1/2 cup Blue Cheese Crumbles
1/4 cup Red Onio
2 cups Romaine Lettuce
1/2 cup Creamy Ranch or Vinaigrette


Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente
  2. Prepare an ice bath; once pasta is done, drain it and plunge it into the ice bath
  3. Cook bacon in a skillet until crispy, then crumble it
  4. Grill or pan-sear chicken breasts until cooked through, then let rest and dice
  5. Chop tomatoes, onions, lettuce, and hard-boiled eggs
  6. In a large mixing bowl, combine pasta, chicken, bacon, tomatoes, onions, and eggs, then add dressing and toss
  7. Fold in romaine lettuce and diced avocado just before serving
