Description

High-Protein Cottage Cheese Pasta is a delicious and nutritious dish that combines creamy cottage cheese into a luxurious sauce for a protein-packed meal with vibrant vegetables.


Ingredients

Scale

12 oz Pasta
1 ½ cups Cottage Cheese
½ cup Parmesan Cheese
3–4 cloves Garlic
2 tbsp Olive Oil
5 oz Spinach
1 cup Cherry Tomatoes
¼ cup Fresh Basil
½ tsp Red Pepper Flakes
Salt to taste
Black Pepper to taste
½ – 1 cup Pasta Water


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil, add pasta and cook until al dente. Reserve 1 to 1.5 cups of pasta water
  2. Prepare the Cottage Cheese Sauce: Blend cottage cheese, half of the Parmesan, minced garlic, olive oil, salt, and pepper until smooth. Add reserved pasta water if needed
  3. Sauté Aromatics & Vegetables: In a skillet, heat remaining olive oil, add cherry tomatoes and sauté for 3-5 minutes. Stir in red pepper flakes if desired
  4. Wilt the Spinach: Add spinach to the skillet and sauté until wilted
  5. Combine & Finish: Add drained pasta and cottage cheese sauce to the skillet, toss to coat. Adjust consistency with reserved pasta water
  6. Serve: Taste and adjust seasonings. Garnish with fresh basil and additional Parmesan cheese before serving

Notes

Reserve more pasta water than you think you'll need to achieve the perfect sauce consistency.
