Description

This High-Protein Lasagna Soup offers all the comforting flavors of traditional lasagna without the time-consuming layering process. Packed with rich tomato sauce, tender pasta, and creamy cheese, it's a hearty bowl perfect for busy weeknights.


Ingredients

1 tablespoon Olive Oil
1 pound Lean Ground Beef or Turkey
1 medium Yellow Onion, diced
4 cloves Garlic, minced
1 (28-ounce) can Crushed Tomatoes
1 (14.5-ounce) can Diced Tomatoes, undrained
2 tablespoons Tomato Paste
6 cups Chicken Broth or Vegetable Broth
2 teaspoons Italian Seasoning
1 teaspoon Dried Basil
1/2 teaspoon Red Pepper Flakes, optional
1 teaspoon Salt, or to taste
1/2 teaspoon Black Pepper, or to taste
6–8 sheets Lasagna Noodles, broken into 1–2 inch pieces
1 cup Ricotta Cheese
1/2 cup Parmesan Cheese, grated
1 cup Mozzarella Cheese, shredded
Fresh Parsley or Basil, chopped, for garnish


Instructions

  1. Heat the olive oil in a large Dutch oven over medium-high heat. Add the ground meat, breaking it up as it cooks until browned. Drain excess fat
  2. Add the diced onion and cook until translucent, about 5-7 minutes. Stir in garlic and tomato paste, cooking for another 1-2 minutes until fragrant
  3. Pour in crushed tomatoes, diced tomatoes, and broth. Add Italian seasoning, basil, red pepper flakes (if using), salt, and pepper. Bring to a simmer, then cover and let it simmer for 15-20 minutes
  4. Increase heat to medium and add the broken lasagna noodles. Cook until al dente, about 8-10 minutes
  5. In a small bowl, mix ricotta, Parmesan, and half of the mozzarella. Season with salt and pepper. Stir until combined
  6. Serve the soup in bowls, adding a dollop of the cheese mixture and remaining mozzarella on top
  7. Garnish with fresh parsley or basil and enjoy

Notes

For a vegetarian version, substitute ground meat with lentils or plant-based meat alternatives.

You can make the soup ahead of time and add the noodles just before serving for best texture.
