Ingredients
4 tablespoons Unsalted Butter
8 ounces Fresh Mushrooms (cremini or button)
1/2 medium Yellow Onio
2 cloves Garlic
3 tablespoons All-Purpose Flour
1/2 cup Dry Red Wine or Beef Broth
2 cups Beef Broth (low sodium)
1 teaspoon Worcestershire Sauce
1 teaspoon Fresh Thyme
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
1 tablespoon Fresh Parsley
Instructions
- Sauté the Mushrooms and Aromatics: Melt the butter in a large skillet over medium heat, add mushrooms and cook until brown. Add onion and garlic; cook until softened
- Make the Roux: Sprinkle flour over the mixture, stir for 1-2 minutes
- Deglaze and Add Liquids: Pour in the wine or broth, scraping the pan. Whisk in beef broth
- Simmer and Season: Add Worcestershire sauce and thyme; let it simmer until thickened, about 8-12 minutes. Season with salt and pepper
- Serve and Garnish: Stir in chopped parsley and serve hot

For vegetarian, substitute beef broth with vegetable broth.
