3 tablespoons Unsalted Grass-Fed Butter
2 tablespoons Raw Honey
3 cloves Fresh Garlic (Minced)
1/2 teaspoon Fine Sea Salt
1/4 teaspoon Black Pepper
1 tablespoon Fresh Parsley (Chopped)


Instructions

  1. Preheat your oven to 400°F (200°C). Wash and peel the carrots, then cut them into even diagonal slices or leave them whole if they are slender
  2. Melt the butter in a small saucepan over low heat. Whisk in honey and minced garlic until you have a fragrant, golden syrup. Pour the mixture over the prepared carrots, toss to coat, sprinkle with salt and pepper, and spread them in a single layer on a baking sheet
  3. Roast the carrots for 20 to 25 minutes, flipping halfway through until tender and caramelized. Remove from oven and sprinkle with fresh parsley before serving

Notes

For vegan option, substitute butter with olive oil or vegan butter and honey with maple syrup.

Ensure carrots are dry before adding the glaze for better caramelization.
