Honeycomb Toffee Candy. Plain brittle honeycomb toffee made by whisking baking soda into 300°F sugar-honey syrup. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

A candy made of bubbles
Honeycomb toffee candy is a brittle, airy sugar confection whose open cells appear when baking soda foams through very hot syrup. This base version is plain and golden, not the separately scheduled chocolate-dipped honeycomb variant.

The recipe is a proposal, not a successful candy test. A thermometer reading of 300°F, pan capacity and fast transfer matter more than a promised minute count. The one-hour set is an estimate that may shift with humidity.
Set up the pan before heat
Line the pan and sift the baking soda before the syrup comes to temperature. The syrup expands dramatically when soda goes in, so a three-quart saucepan is a deliberate safety and texture choice. Do not try to prepare a pan while the foaming candy waits.
Sugar, honey and water are the only syrup ingredients. Honey contributes its own flavor; changing it to corn syrup alters both flavor and behavior. The two teaspoons baking soda are not optional in a candy named for its aeration.
No chocolate, butter or nuts appear in this base recipe. Package labels and potential cross-contact still need review, and honey means it is not a vegan candy.
Ingredients for 24 pieces
| Ingredient | Amount | Use |
|---|---|---|
| Granulated sugar | 1 cup | Syrup. |
| Honey | 1/4 cup | Syrup flavor. |
| Water | 1/4 cup | Syrup. |
| Baking soda | 2 teaspoons | Sift to remove lumps; add only off heat. |
Step-by-step method
- Line a 9-inch square pan with parchment and place on a heatproof surface. Sift 2 tsp baking soda into a small dry bowl. In a 3-quart saucepan combine 1 cup sugar, 1/4 cup honey and 1/4 cup water, stirring before heating to moisten sugar.
- Heat syrup to a boil, then cook without stirring until a candy thermometer reads 300°F, approximately 10–15 minutes depending on pan and heat. Keep hands and children well clear of the very hot syrup.
- Remove pan from heat. Quickly whisk in all 2 tsp baking soda just until incorporated; the syrup will foam dramatically. Immediately pour into prepared pan without spreading or pressing, which would crush bubbles.
- Leave undisturbed until completely cool and brittle, approximately one hour. Lift from parchment and break into around 24 irregular pieces. Record thermometer calibration, foam height, set and actual portion count in a first trial.
From syrup to foam
Moisten sugar with honey and water, then bring to a boil. After boiling, avoid stirring and follow the candy thermometer to 300°F. A clock alone cannot establish the candy stage across different stoves.
Remove from heat, add the sifted baking soda, whisk only until no dry pockets remain, and pour immediately. Spreading with a spatula or knocking the pan can flatten the cells. Keep clear of hot splashes during the foam.
Let the slab cool fully before breaking. The proposed two dozen pieces are intentionally irregular, so count and serving size should be reconciled with a photographed real batch.
If it is sticky or flat
Sticky candy can reflect syrup pulled before its endpoint or humidity absorbed after cooling. Check the thermometer and room conditions. A flat slab may come from old baking soda, overmixing or pressing the foam into the pan.
An unpleasant dark flavor can follow overheating the honey-sugar syrup. Record the color and temperature together; do not promise the same honeycomb color with every honey brand.
Tasting Table provides a related method reference. Its result does not validate this honey-to-sugar ratio or storage.
Edible gift decisions
Keep pieces dry and separated after cooling, then test container quality before recommending a shelf life. Moisture can change crunch, so the final instructions require a real hold test.
Use an image of plain porous pieces. The future dipped candy should not reuse this exact photograph under a different title. No exact Pinterest Search percentage is verified for either long-tail phrase here.
Toffee questions
Do I need a thermometer?
Yes for this working method: the syrup is cooked to 300°F, not a fixed five-minute boil.
Can I stir after adding soda for a minute?
No. Incorporate quickly and pour; prolonged stirring may collapse the foam.
Is there chocolate?
No. This is the plain honeycomb base; chocolate-dipped candy belongs to another calendar slot.
