Cocoa cookies with a marshmallow top

Soft dark cocoa cookies get one marshmallow half near the end of baking, followed by a light dark-chocolate drizzle. They suggest a cup of hot cocoa without adding beverage powder to the dough.

This is an untested working formula, including marshmallow adherence and the proposed twenty-four-cookie count.

Make a simple cocoa dough

Beat butter and brown sugar, add egg and vanilla, then mix the separately whisked flour, cocoa, soda and salt just until combined. Chill thirty minutes to keep the soft dough easier to scoop.

Use plain unsweetened cocoa rather than a sweetened hot-chocolate mix, which would change sugar and dry balance.

Dark chocolate baking bar, chopped3 ouncesThin finishing drizzle.

Step-by-step method

  1. Beat 1/2 cup softened butter with 3/4 cup brown sugar. Beat in one egg and 1 tsp vanilla. Whisk 1 1/4 cups flour, 1/2 cup cocoa, 1/2 tsp baking soda and 1/2 tsp salt; mix into the wet base. Cover and chill about thirty minutes.
  2. Heat oven to 350°F. Scoop twenty-four similar small dough mounds onto two lined sheets. Bake one sheet at a time approximately 8–9 minutes until the cocoa cookie edges look set.
  3. Place half a large marshmallow, cut side down, on each warm cookie and return that tray to the oven about 2–3 minutes until marshmallow puffs and adheres without burning. Transfer to a rack and repeat with the second tray.
  4. Melt 3 oz chopped dark chocolate gently in short microwave bursts, stirring, and drizzle lightly over completely cooled cookies. Let set about twenty minutes and record spread, marshmallow adhesion and yield in a kitchen trial.

Top near the end of baking

Bake the cocoa rounds until edges look set, then press a marshmallow half cut side down onto each. A final two or three minutes puffs and attaches the top without cooking it through the entire cookie bake.

Sally's Baking has a marshmallow-surprise hot cocoa cookie reference. This recipe has its own measured dough and a thin chocolate drizzle, and still needs a test for spread and color.

Drizzle after cooling

Melt chopped dark chocolate in short bursts and stir between them. Drizzle over cool cookies; warm tops can turn the chocolate into a messy full coating.

Let the topping set before stacking. Record whether the marshmallow stays soft and whether the cookie can be removed from parchment intact.

Serving and storage

One topped cookie is the provisional serving. Marshmallows may contain gelatin and packaged chocolate may include milk and soy; do not imply a vegetarian or allergen-free cookie.

No exact storage or mailing result has been measured. Photograph a marshmallow-topped cocoa cookie, not a mug of cocoa alone.

Cocoa cookie questions

Is hot cocoa mix in the batter?

No. Unsweetened cocoa powder gives the cookie its chocolate flavor.

When do marshmallows go on?

For the estimated last two to three minutes of baking.

Can I stack them immediately?

Wait for the chocolate drizzle to set and inspect the marshmallow texture first.
