Description

1 large head Romaine Lettuce
4 oz Beef Salami
1 lb Boneless, Skinless Chicken Breasts
1 cup Cherry or Grape Tomatoes
1 large Cucumber
1/2 small Red Onio
1 medium Bell Pepper
4 oz Provolone Cheese
1/4 cup Parmesan Cheese
1/2 cup Kalamata Olives
1/4 cup Pepperoncini
1/4 cup Extra Virgin Olive Oil
3 tbsp Red Wine Vinegar
1 tsp Dijon Mustard
1 clove Garlic
1/2 tsp Dried Oregano
Salt & Black Pepper to taste


Instructions

  1. Prep your protein: If using grilled chicken, season and cook it first, then dice. If using beef salami, dice it into small pieces
  2. Chop the veggies: Wash and dry the romaine lettuce, then chop into bite-sized pieces. Dice the other vegetables into small pieces
  3. Dice the cheese and olives: Cut provolone cheese and halve the olives
  4. Combine the salad base: Mix greens, vegetables, cheese, olives, and your chosen protein in a large bowl
  5. Whisk the dressing: Mix olive oil, vinegar, mustard, garlic, oregano, salt, and pepper until well combined
  6. Dress and toss: Pour dressing over the salad and toss well
  7. Serve immediately: Transfer to bowls and garnish with Parmesan cheese
